Fairmont has expanded its UK and Ireland portfolio with the opening of Fairmont Cheshire, The Mere, following a £60 million redevelopment that has transformed the historic country estate into a luxury resort.
Opened on 10 July, the property becomes Fairmont’s fifth hotel in the UK and Ireland, joining The Savoy, Fairmont Windsor Park, Fairmont St Andrews and Carton House.
Historic estate reimagined
Set on a 157-acre estate near Knutsford with a history dating back to the Domesday Book, the resort has undergone an extensive refurbishment led by London-based Bergman Design House in collaboration with Select Group and Accor.
The redevelopment has expanded the hotel from 81 to 116 rooms, including 23 suites, while introducing a 1,715-square-metre spa featuring a 20-metre indoor pool, hydropool, outdoor vitality pool, hammam, sauna and steam rooms.
The resort’s dining offering includes Gordon Ramsay at The Mere, alongside The Club Lounge and The Orangery.
Design inspired by the landscape
Rather than adopting a conventional luxury aesthetic, the interiors take inspiration from the estate’s lake, woodland and golf course, incorporating natural stone, timber, handcrafted tiles and bespoke furnishings.
Bergman Design House Co-founder Marie Soliman said the design aimed to reflect the property’s heritage while embracing its natural surroundings.
“The Mere is a property with real history, and our responsibility here was never to impose a style on it but to let the setting lead,” she said.
